The short answer: Learn when to use reusable product options, separate inventory variants, and restaurant choice groups.
Set up reusable options

Open Product Options
Choose Shop → Product Options. Create an option such as Size, Color, or Material.

Add values
Add the choices that belong to that option, such as Small, Medium, and Large.

Apply to a product
Select the option while editing the product and create the required variants. Products without variants do not need an option.
Keep variants distinct
Give sellable variants the correct SKU, price, availability, and inventory. Check that a buyer can select the intended combination. Use the scanner and warehouse guide to understand how SKUs and stock locations work together.
Tags describe products for organization and discovery. They do not create separate variants or replace a buyer’s size or color choice.
Build restaurant choice groups
For menu items, create choice groups with minimum and maximum selections, availability, quantities, prices, and images. A maximum of 0 means no maximum where the form says so. Use a required minimum when the customer must choose before ordering.
Attach separate menu products when buyers should be able to add those items to their order. Review the resulting customer choices and prices. Imported Square variations and modifiers remain linked after import; coordinate changes with the connected catalog.
